     Carrot Cake

Ingredients
Cake
2 cups all-purpose flour
4 ½ tsp baking powder
1 ½ tsp baking soda
2 ¼ tsp cinnamon
¼ tsp salt
1 ¼ cups vegetable oil
1 ¾ cups sugar
3 eggs
 
4 cups grated carrots
1 cup chopped pecans
¾ cups raisins
Cream Cheese Icing
¼ cup butter, softened
2 3-ounce packages cream cheese, softened
½ tsp vanilla
2 ½ cups powdered sugar, sifted (Half for less sweet)

Instructions
Spray a 9 x 13-inch pan w/ non-stick spray. Set aside.
For Cake- In medium bowl, mix together flour, baking powder, baking soda, cinnamon, and salt. Set aside. With electric mixer on medium speed, mix oil and sugar for 1 minute. Add half of the flour mixture and 2 eggs. Mix together until moistened. Add remaining flour and egg, grated carrots, pecans, and raisins. Mix on high for 5 minutes. Pour cake batter into prepared pan and spread evenly. Bake at 350 degrees for 50-55 minutes, or until cake tests clean. Cool before topping w/ icing.
For Icing- With electric mixer on medium speed, cream butter, cream cheese, and vanilla until smooth, about 1 minute. Turn mixer to low speed and gradually add sifted powdered sugar. Return mixer to medium speed and mix for about 5 minutes or until smooth.
