Preheat oven to 400 degrees,cutzucchini lengthwise in half and trim ends, with a teaspoon, carve out centerof each, leaving a 1/2 inch shell and reserve the flesh. Put the zucchini halves into a small casserole dish and add 1/2 cup water, cover dish with foil, bake for 10 minutes. remove dish from oven and reduce heat to 350 degrees.
Making the stuffing- heat the olive oil in a large skillet over medium-high heat, add the onion. cook, stirring occasionally, until it softens, about 5 minutes. chop the reserved zucchini flesh and add to pan with garlic and tomato,cook 5 minutes more. take the skillet off the heat, add the bread, capers, basil and goat cheese, mix well, season with salt and pepper.
drain the water from the casserole dish, fill zucchini halves with the stuffing, bake for 15 minutes, serve hot.
