     Wild Duck A L'Orange

Ingredients
2 - 1 1/2 to 2 pound wild ducks, halved lengthwise
1 medium orange, sliced and separated into rings
2 tablespoons butter or margarine
2 tablespoons frozen orange juice concentrate
2 tablespoons honey
1 tablespoon lemon juice
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
Additional Orange slices
 

Instructions
Place the duck halves, skin side up, on rack in shallow roasting pan. Roast, uncovered, in 400 degree oven for 50 to 60 minutes or until drumstick moves easily in socket. Cover with foil, if necessary, to prevent excessive browning.
Meanwhile, prepare orange glaze. Cook onion in butter or margarine until tender but not brown. Stir in orange juice concentrate, honey, lemon juice, ginger and allspice. Heat 5 to 10 minutes of roasting. Brush with glaze just before serving.
Serving Suggestions
Garnish with additional orange slices.
