     Pork Chops with Peanut Pilaf

Ingredients
2 1/2 cups water
1 cup regular uncooked brown rice
1 teaspoon ground ginger
1/4 teaspoon salt
6 pork loin chops, cut 1 inch thick (2 3/4 to 3 pounds total)
1 tablespoon cooking oil
Salt
Pepper
1 cup chopped apple (1 large)
 
1/2 cup coarsely chopped salted peanuts
1/2 cup chopped celery
1/2 cup chopped onion

Instructions
IN a saucepan combine water, uncooked rice, ground ginger, and the 1/4 teaspoon salt. Bring to boiling reduce heat. Cover and simmer for 45 minutes to 60 minutes or till water is absorbed.
Meanwhile, trim excess fat from chops. In a large skillet brown chops on both sides in hot cooking oil. Season with salt and pepper.
Combine cooked rice, chopped apple, chopped peanuts, celery and onion; mix well.
Spread rice mixture in a lightly greased 13x9x2 inch baking dish, arrange pork chops atop. Bake, uncovered, in 350 degree oven about 50 minutes or till meat is well done.
