Ingredients
1 Tablespoon olive oil
1 1/2 cups chopped onion
1 teaspoon bottled minced garlic
1 cup chopped green pepper
1 cup chopped red bell pepper
2 1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon ground red pepper
 
1/2 teaspoon black pepper
1 cup uncooked long-grain rice
2 cups fat-free, less sodium chicken broth
1 (14.5-ounce) can diced tomatoes, undrained
2 cups shredded cooked turkey or chicken or 1/2 pound cooked chopped shrimp
6 ounces andouille or smoked sausage, chopped
2 tablespoons sliced green onions

Instructions
Heat oil in a large Dutch oven over medium-high heat. Add chopped onion and garlic; saute 6 minutes or until lightly browned. Stir in bell peppers and next 5 ingredients; saute 1 minute. Add rice; saute 1 minute. Stir in broth and tomatoes; bring to a boil. Cover, reduce heat and simmer 15 minutes. Stir and if needed add 1 cup more of liquid. Add meat or shrimp and sausage; cover and cook 5 minutes. Sprinkle with green onions.
