     PORK HASH with Lop Cheong (Chinese sausage)

Ingredients
1 pound ground pork
2 T dark soy sauce
1-2 tsp salt, or to taste
1 tsp white pepper
2 T cornstarch
2 cups water or chicken broth, enough water so that the pork is loose.
2-3 chinese sausage links, cut into thin, diagonal slices
Optional- You can add to the ground pork mixture with or without the lop chong--
 
chopped black mushrooms
preserved salted turnips or vegetables
chopped water chestnuts
sliced ham
green onions
anything that your taste desires. The pork mixture is a basic start.

Instructions
In a 10 inch glass pie plate or a shallow dish with the same diameter- Mix the ground pork, soy, salt, pepper, cornstarch together while gradually adding water, mixing and adding the water until the meat is the consistency of thick soup. You may or may not use all the liquid. If not enough liquid is used, the cooked pork will be very dense, not light.
Lay the chinese sausage on top of the pork.
Place the dish in the steamer and steam for about 20-30 minutes or until the meat holds together and is floating in the sauce. Serve with hot rice.

4 people if there are no other dishes
