Chop cabbage into square bite size pieces. Add olive oil in pan, add cabbage, salt and pepper, and cook until lightly crisp. Brown hamburger meat with onion. Season with salt, pepper, and garlic. Drain meat when done.
Grate monterey jack cheese. Mix together meat, cabbage, cheese, and rotel.
