In a mixing bowl with dough hook attachment, mix water, sugar, yeast, and salt on speed one for one minute. Add half of both flours and mix on speed 1 until combined. Increase to medium speed and beat dough for 3-4 minutes (dough should be very smooth).
Add the rest of the flours 1 cup at a time until dough begins to pull away from sides of bowl. You may need more or less flour than the recipe calls for. Remove dough from bowl and knead on a floured surface until smooth, roughly 5 minutes. Place the dough into a large greased bowl and let rise in a warm place until double, about 1 hour (You can also place the dough in the refrigerator overnight).
