     Bean Buritos

Ingredients
2 Tbsp olive or grapeseed oil
1 red pepper, diced
2 Cup cooked brown rice or quinoa
1 tsp ground cumin
6 gloves garlic, crushed
2 onion, chopped
2 cans black beans (or 4 cups cooked)
4 tsp chili
1 tsp sea salt
 

Instructions
Saute onion, garlic and pepper in oil. Add beans, rice and spices. Simmer together as you prepare rest of toppings.
Topping Choices Shredded lettuce Salsa Spinach leaves Chopped tomatoes Cut onion or scallion Whole Wheat tortillas
RGuacamole Mash 1 avocado with 2 tsp lemon juice and 2 tbsp salsa Opt- 1 Tbsp flax oil
Layer center of tortilla with bean mixture, lettuce, salsa, etc. Roll and enjoy!
