     Carrot Cake

Ingredients
Carrot Cake-
1 1/2 cup wesson oil
2 cups sugar
4 eggs- add 1 at a time
2 tsp baking powder
1/2 tsp salt
2 tsp. soda
2 tsp. cinnamon
2 cups flour
 
3 cups grated carrots
1 cup chopped pecans
Cream Cheese Icing-
1 8oz. pkg cream cheese
1 stick butter
1 box powdered xxxx sugar
1/2 cup chopped pecans

Instructions
Sift flour twice, adding dry ingredients second time. Add to sugar and oil,etc. Add carrots and nuts. Bake at 350 for 25 minutes in 3 cake pans or one long pan.
