     Moist Oatmeal Raisin Cookies

1 cup raisins and water to cover
1 cup sugar
1/4 cup brown sugar
1 cup butter or margarine, softened
2 eggs
1 teaspoon vanilla
7 tablespoons raisin juice (from cooked raisins)
2 cups flour
1/4 teaspoon salt
1 teaspoon soda
2 cups oatmeal (quick or old-fashioned)

Place raisins in small saucepan and cover with water. Bring to a boil and simmer for 5 minutes. Drain and cool.
Cream sugars, shortening, eggs and vanilla. Mix dry ingredients and add alternately with raisin juice.
Add oatmeal and mix well. Add raisins and mix by hand until evenly distributed throughout batter.
Drop by teaspoons onto ungreased cookie sheet. Bake at 400 degrees for 10-12 minutes.
