     Fluffy Rice Pudding

Ingredients
2 Eggs
2 1/4 C skim milk
1/4 tsp nutmeg
1/3 C sugar
1/2 tsp salt
1 tsp vanilla extract
2/3 C quick cooking rice
1/4 C raisins
 

Instructions
Preheat oven to 350 degrees. Whisk eggs and milk together. Add nutmeg, sugar, and salt. Whisk until sugar is dissolved. Add Vanilla
Add rice and raisins to egg mixture. mix well. Pour into lightly greased custard cups.
Place custard cups in a 9 x 12 in. pan. Add enough hot water to pan to come halfway up sides of custard cups.
Bake for 40 minutes or until set around edges. Let stand in hot water to keep warm or remove to cool before serving.
