In a LARGE pan, heat oil on med high. Add onion and rice. Stir and cook until onion is soft. Reduce heat to med and add veggies. Cook and stir to combine well.
Spread the mixture to the sides of the pan, leaving space in the middle for the eggs. Add the eggs and scramble until cooked firm. Mix eggs into rice and veggies.
Serve. Providing soy sauce for each to add to personal taste.
