     BIRTHDAY CHICKEN

Ingredients
3 1/2-4 lb. chicken, cut into pieces
Marinade in-
1 cube of fermented red bean (Can be found in Asian markets)
1 Tbsp of the juice from the fermented red bean
4 cloves of garlic, minced
1 Tbsp of minced fresh ginger
1-2 Tbsp. of dark soy sauce
1 egg
 

Instructions
Place the chicken pieces in a large bowl.
Add the ingredients for the marinade in with the chicken.
With your hands, thoroughly mix the marinade into the chicken. Be sure the cube of fermented red bean is mix well.
Marinade for at least 1 hour in the refrigerator. Can be done a day ahead. Preheat the oven at 425 degrees. Take each marinated chicken piece and coat it with flour on all sides. Place it on a lightly greased baking pan, skin side down. Bake for about 25 minutes or until a nice crust has formed, and then turn the chicken over, being careful not to tear the crusted side of the chicken. Bake for another 15 minutes or until done.
