Chop the potato and onion, heat the butter in a saucepan until melted, then add the potato and onion and saute. Add the florets of cauliflower and continue to saute.

Add curry powder and saute for a minute or 2. Add stock. Boil, then simmer for 20 inutes. Add milk.

Blend in a liquidiser or use a hand blender. Add salt and pepper to taste, the serve.

I served this at a luncheon once and someone actually came up to me and said "That was the best cauliflower soup I have ever tasted." The curry powder was my addition to the recipe.
