2 lbs. stew meat, cut in 1 inch cubes

1 - 2 tbsp. cooking oil
|

1 1/2 c. chopped onion
|
|
1 can (16 oz.) tomatores with liquid, cut up
|

1 can (10 1/2 oz.) beef broth
|
|
3 Tbsp. quick-cooking tapioca
|
|
1 tsp. salt
|
|
1/2 lb. baby carrots
|
|
3 medium potatoes, cut into cubes
|
|
|
|
1 c. sliced celery (1 in. pieces)
|

|

|
|
|
|
|

|
|

Instructions |

|
In Dutch oven (or roaster), brown the beef in oil. Drain.
|
|

Add onion, tomatoes, beef broth, tapioca, and salt. Bring to a boil; remove from the heat.
|

|
Cover and bake at 350 for 1 1/2 hours. Stir in carrots, potatoes, and celery. Bake, covered, l hour longer or until meat and vegetables are tender.
