     Rosemary Hash with Yams

Ingredients
4 yukon gold potatoes, grated
1 medium yam, grated
1 med white onion, grated
2 carrots, grated
2 lg. cloves of garlic, diced small
1 tbsp dried parsley
1 and 1/2 tsp. dried rosemary
4 slices bacon, chopped small
salt and pepper to taste
 
2tbsp olive oil

Instructions
In a medium hot pan, cook bacon until brown.
Add olive oil. When the oil is hot, add all ingredients. Cook, stirring frequently, just until ingredients are tender.
Serving Suggestions
Serve with a fried egg. Enjoy!
