     Carrot Cake

Ingredients
2 cups flour
2 tsp baking soda
2 tsp cinnamon
½ tsp salt
2 cups sugar
1 cup oil
4 eggs
1 cups crushed pineapple with juice
3 cups grated raw carrot
 
1 cup raisins (optional)
1 stick margarine
8 oz confectioners sugar
2 tsp vanilla

Instructions
Cream together oil, sugar and eggs. Mix in pineapple and carrot.
Mix together flour, baking soda, cinnamon and salt. Gently add to creamed mixture. Mix in raisins, if desired.
Pour into 2 – 9” round cake pans (greased). Bake 350 for 40-45 min. When cool, remove from pans.
Frost cake with cream cheese frosting. (Mix together cream cheese, margarine, conf sugar and vanilla)
