     Chicken Tortilla Soup

Ingredients
1 tbsp. olive oil
1 onion, chopped
1 green pepper, chopped
2 cloves garlic, minced
1 can black beans, drained
1 can petite diced tomatoes
1 cup cooked chicken, diced or shredded
1 package taco seasoning
2 cans chicken broth
 
tortilla chips
sour cream
chopped avocado
Monterey jack cheese, shredded

Instructions
Saute onion, pepper and garlic in olive oil in Dutch oven for 5-7 minutes over medium heat.
Stir in beans, diced tomatoes, chicken and taco seasoning. Bring to simmer.
Slowly add chicken broth and stir over high heat. Bring to boil. Reduce heat and cover.
Let simmer for 20-30 minutes. Serve over chips and top with remaining ingredients.
