     Tomatoes Stuffed with Mushrooms and Cheese

Ingredients
4 Large Tomatoes
olive oil
1 lb mushrooms, diced
1 onion, chopped
1 bell pepper, chopped
3 cloves garlic, crushed
1/2 tsp oregano
1/2 cup parsley, chopped
1/4 tsp cayenne pepper
 
1/4 cup Parmesan

Instructions
Preheat oven to 350f Scoop out center of tomato, save pulp.
heat oil in pan, sauté mushroom, onion, pepper, and garlic for 10 minutes. Add tomato pulp, oregano, parsley, and cayenne, stir together and cook for 5 minutes
Place tomato shells on oiled backing sheet. stuff tomatoes and top with cheese. Bake 10 minutes
