     Hollandaise Sauce

Ingredients
1/2 cup butter
3 egg yokes
1 Tablespoon water
1 Tablespoon lemon juice
little salt
little pepper
 

Instructions
Using a double boiler or improvising by using a large pot partially filled with water and a small pot floating on top, bring water to a slow boil.
Add butter and let it melt.
Separate egg yokes and beat them. Mix in water and lemon juice. Add salt and pepper.
Mix until it thickens. Remove from heat.
