     Potato Leek Soup

Ingredients
1 bunch leeks, dark green tops removed
1 1/2 lb. potatoes
6 cups low sodium chicken broth
1 small bunch green onions, dark green tops removed
1 tsp salt, a few twists on a pepper mill
1 heaping 1/4 tsp dried thyme leaves
4 tbs butter
 

Instructions
Chop white and light green parts of onions and leeks Saute in 4 TBS butter 20 minutes until wilted, but not brown.
Add chopped potatoes, 6 cups chicken broth and cook until tender
Add Thyme, salt and pepper. Blend with immersion blender until smooth. Top with chopped chives.
