1 bunch leeks, dark green tops removed
|
|
1 1/2 lb. potatoes
|
|
6 cups low sodium chicken broth
|
|
1 small bunch green onions, dark green tops removed
|
|
1 tsp salt, a few twists on a pepper mill
|
|
1 heaping 1/4 tsp dried thyme leaves
|
|
4 tbs butter
|
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|

|
|
|
|
|
|

Instructions |
|
|
Chop white and light green parts of onions and leeks
Saute in 4 TBS butter 20 minutes until wilted, but not brown.
|
|
|
Add chopped potatoes, 6 cups chicken broth and cook until tender
|
|
|
Add Thyme, salt and pepper.
Blend with immersion blender until smooth.
Top with chopped chives.
