     Rhubarb Crumble Cake

Ingredients
3 c. rhubarb
2/3 c. sugar
1/3 c. butter, softened
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
 
1/2 c. sour cream

Instructions
In bowl toss rhubarb with 2 Tbsp. sugar. Set aside. Beat eggs, add vanilla, flour, baking powder, soda and salt. Stir, mixing in sour cream. Spread into 9inch pan. Sprinkle with sugar, layer of rhubarb, sprinkle with rest of sugar. Bake 350 for 1 hour and 15 minutes.
