     Wild Rice with Mushrooms

Ingredients
1/4 cup olive oil
2 tsp minced garlic
1/2 cup chopped onion
1 (8 oz) package sliced baby portobella mushrooms
1 (6 oz) box long grain and wild rice
1 1/2 cups chicken broth
1 tbsp chopped fresh parsley
1/4 tsp ground black pepper
 

Instructions
In a medium skillet, heat olive oil over medium heat. Add garlic, onion, and mushrooms; cook for 10 mins, stirring frequently, until tender. Add rice and seasoning packet; cook for 3 mins, stirring constantly. Add chicken broth, bring to a boil. Reduce heat to low, cover, and simmer for 25 mins. Remove from heat; let stand, covered, for 5 mins. Fluff rice with a fork. Add parsley and pepper, stirring to combine.
