     Bacon & Brussel Sprout Hash

Ingredients
oil
4 slices bacon
3 sprigs fresh thyme
2 c. brussel sprouts, thick slices
1 lb. fingling potatoes, halved
1/2 c. red pearl onions, peeled
S & P
1/2 c. chicken stock
2 Tbsp. balsamic vinegar
 
1/4 bunch parsley

Instructions
Saute bacon and thyme in oil. cook then remove from pan. Discard half of fat then add brussel sprouts, potatoes and onions. Season with salt and pepper. Cook until browned. Add stock and steam 3-5 minutes until evaporated and tender. Add vinegar and toss to coat. Cook until reduced then fold parsley and bacon in.
