     Date and Nut Bread

3/4 cup chopped pecans
1 cup chopped dromedary dates
1 1/2 tsp bking soda
1/2 tsp salt
1/4 cup shortening
3/4 cup boiling water
2 eggs
1/2 tsp vanilla
1 cup sugar
1 1/2 cups flour

combine nuts, dates, soda and salt in a mixing bowl. Add the shortening and boiling water. Allow mixture to stand for 15 minutes. Stir to blend. Beat the eggs lightly. Add vanilla, stir in the sugar and sifted flour; Add the date mixture. Do not overmix. Place in a greased 9x5x3 inch loaf pan. Bake one hour in a 350 degree oven. When done, toothpick inserted in center will come out clean.. cool before removing. Loosen sides with a spatula. for perfect slicing, allow loaf to cool for several hours
