     Grilled SAlmon with Mango Relish

Ingredients
Mango Relish (below)
4 salmon fillets (4-6 oz each)
Mango Relish
1 mango, peeled, pitted and chopped (1 cup)
1 small jalapeno chili, seeded and finely chopped
( 2-3)tsp
1/4 cup finely chopped red onion
 
2 tbls finely chopped fresh or 2 tsp dried mint leaves
2 tbls lime juice
1/8 tsp salt

Instructions
Prepare Mango Relish
Heat coals or gas grill.
Cover and grill fish 4 inches from medium heat 10-15 minutes, turning once, until fish flakes easily with fork. Serve with relish. 4 servings
