     Cheese Blintzes

2 cups All Purpose Flour
1/4 cup Sugar
1/2 tsp Salt
2 cups Milk
2 Eggs
1 tbsp melted Butter
1/2 tsp Vanilla Extract
4 1/2 cups Frozen Blueberries
3/4 cup Sugar
1 tbsp & 1 1/2 tsp Cornstarch
2 Egg Yolks
1 tsp Vanilla Extract
2 cups Cottage Cheese (Drained)
8 oz softened Cream Cheese
1/4 cup Sugar

CREPE MIX Combine the Flour, Sugar, and Salt in a small bowl. In a large bowl combine the Milk, Eggs, Butter, and Vanilla. Mix. Pour dry ingredients into the wet while mixing!
BLUEBERRY SAUCE In a sauce pan put the Blueberries, Sugar, and Cornstarch. let simmer until thick. remove from heat.
FILLING In a mixer combine the egg yolks, vanilla, cottage cheese, cream cheese, and sugar
Take a small sauce pan and pur about a quarter cup of mix in. move around until the pan is coated with the mix. let cook then flip. Fill the Crepe with cottage cheese filling. Roll and place in a baking pan. Repeat until all the Blintzes are made and bake a 350degrees for 7-8 minutes
Serving Suggestions
Serve with whip cream for a sweeter taste!
