     Midwestern Potato Salad

Ingredients
4 pounds new potatoes
2 tablespoons chopped parsley
1/2 cup chopped celery
1/2 cup chopped red onion
1 1/2 cups mayonnaise (or less)
2 teaspoons Dijon mustard
11/2 teaspoon pepper
1 tablespoon white vinegar
1 tablespoon sugar
 
21/2 teaspoon salt

Instructions
Boil patatoes in their skins until just tender; drain. Cut potatoes into 3/4 inch chunks (can leave skins on) Add the parsley, celery and red onion.
Mix together the mayonnaise, mustard, pepper, vinegar, sugar and salt.
Add to the potato mixture and gently stir until the potatoes are evenly coated with dressing.
Serving Suggestions
Great with chicken !
