     Spinach & Mushroom Salad

Ingredients
1 bag of baby spinach (washed)
8 ounces of fresh mushrooms sliced
1/2 cup oil
3 tablespoons white wine vinegar
1 tablespoon grated onion
2 tsp. Dijon or other mild mustard
1 tsp. salt
1 tsp. sugar
freshly ground pepper
 
4 slices crisp bacon, crumbled
Instructions
Make sure spinach is washed and dried and mushrooms are cleaned and sliced. Break spinach pieces into bite sized pieces. Sprinkle with bacon.
Dressing- Combine oil, vinegar, onion, mustard, salt, sugar and pepper in a jar or plastic container with lid. Shake well. Add to salad and coat well.
