Avocado Fudge

Ingredients
-
1 ripe avocado
-
1/2 cup margarine (Nucoa, for vegans)
-
1 tsp vanilla
-
1 cup cocoa
-
3 cups powdered sugar
-
1/3 cup chopped nuts (optional)
 

Instructions
Melt margarine in a medium saucepan over low heat.
Puree melted margarine and avocado in blender or food processor until completely smooth (no chunks of avocado; the riper the avocado, the easier this step is)
Return mixture to saucepan (over very low heat) and add rest of ingredients (except nuts). Add powdered sugar a portion at a time. Once all of the sugar is added, the mixture should be thick. Add nuts, if desired.
Transfer mixture to a loaf pan lined with waxed paper so it can be lifted out of the pan once firm. Refrigerate until firm which takes awhile if using vegan margarine. Nucoa margarine firms up the best. Earth Balance never stays firm once fudge is removed from refrigerator. I have only made this recipe with Nucoa (and Earth Balance).
