     Rhubarb Muffins

Ingredients
1 1/4 cups brown sugar
1 cup buttermilk
1 egg
1 1/2 cups rhubarb, cut into pieces
1 tsp vanilla
1/8 cup nuts
2 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
 
1 tsp butter
1 tsp cinnamon
1/2 cup sugar
1/2 tsp salt

Instructions
Beat first six ingredients together. Mix flour, baking powder, baking soda and salt and mix wit first mixture. Spoon into cupcake tins.
For topping, mix butter, cinnamon and sugar and sprinkle on muffins. Bake at 375 degrees for 18-20 minutes. Makes 14 muffins.
