     Coffee Cake and Streusel Topping

Ingredients
2 cups all-purpose flour
2 tsps baking powder
3/4 tsp salt
1/2 cup (1 stick) light margarine, softened
1 cup splenda granular no calorie sweetner
1/4 cup honey
2 whole large eggs
1 tsp vanilla
1/2 cup skim milk
 

Instructions
Preheat ove to 350 F. Coat 8 inch baking dish with cooking spray. Spoon batter into prepared 8-inch baking dish. Bake until golden brown, about 55-60 minutes.
Streusel Topping(optional)
2 tbsp quick oats 2 tbsp all-purpose flour 1 tsp cinnamon 1 tbsp SPLENDA granular no calorie sweetner 2 tbsp light brown sugar 1 tbsp light margarine 1/8 cup sliced almonds or chopped pecans
Combine the ingrediendts listed above and sprinkle on top of muffins or coffee cake prior to baking.
Serving Suggestions
Other- options, 2 cups bananas or 1 cup bluberries. 2/3 cup nuts
