     Fried Fish Braised In Soy Sauce And Chilli Oil

Ingredients
2 white flesh fish
5 cloves of garlic, minced
1 small piece of ginger, minced
3 chilli, minced
1/2 onion, minced
1 tomato, peeled, minced
1 tbs of sesame oil
1 tbs of chilli oil
1 teaspoon of sugar
 
1 tbs of soy sauce
pinch of salt and pepper
1 tbs of hot fermented bean paste (dou ban jiang)
3 cups of water

Instructions
Deep fried fish until golden brown
with sesame oil and chilli oil saute garlic, ginger and chilli until fragant add sugar until caramelize but not browned add soy sauce, dou ban jiang, keep stirring until fragant add onion, stirr until onion is soft, add tomato, stirr well add salt and pepper
add water, fish, with medium heat cook until the water reduces and the fish absorbs all the flavor, serve
