1 T olive oil
|
|
1 cup Basmati Rice
|
|
1.5 cups chicken/vegetable broth
|
|
2-3 cloves of garlic, minced
|
|
2 T lime juice
|
|
zest from one lime
|
|
1/2 cup cilantro chopped
|
|
1 tsp or less of salt
|
|

Instructions |
|
|
Add oil to sauce pan on medium/low heat
Add garlic and rice to oil and saute 2 minutes
|
|
|
Add broth, salt and lime juice and bring to a boil.
|
|
|
Cover and cook on low for 15 minutes or according to rice directions
|
|
|
When rice is done, remove from heat. Add lime zest and cilantro and stir to mix.
Serve immediately
