1 10 oz package frozen spinach, thawed and drained

1 cup flour
|

1 tsp salt
|

1 tsp baking powder
|

1 cup milk
|

1/2 cup melted margarine
|

2 eggs, beaten

1/2-3/4 cup chopped onion
|
|
1 lb shredded cheese (1/2 lb sharp, 1/2 lb pepper jack)

Instructions |

|
Thaw and drain spinach.
|
|
|
In a large bowl, combine all ingredients, mix well and pour into greased 9 x 13 pan.
|

|
Bake uncovered at 350 degrees for 30 minutes.
|
|
|
Serve as a side dish or have for breakfast.
|
