     Chicken Quesadillas

Ingredients
6 oz boneless, skinless chicken breasts
Italian dressing
12 inch flour tortilla
Margarine, melted
1 cup Cheddar Cheese
1 Tbsp diced tomato
1Tbsp diced jalapeno pepper
Cajun seasoning
Shredded lettuce
 
Dided tomato
Sour cream
Salsa

Instructions
Place the chicken in a bowl with enough Italian dressing to coat all sides, allow to marinate for 30 minutes in the refrigerator.
Grill the marinated chicken for 10-12 minutes, until no longer pink, on a lightly oiled griddle. Cut into 1/4 inch cubes and set aside.
Brush one side of the tortilla with the melted margarine and place brushed side down, in a skillet over medium heat.
In the following order, top on half of the tortilla with the cheese, tomatoe, pepper, and cajun seasoning to taste. Spread evenly and then top with chicken. Fold over the empty tortilla side to close, then flip the quesadilla over in the pan so that the cheese is on top of the chicken. Cook until the chees melts. Remove from pan, cut, and serve with lettuce, tomato, sour cream, and salsa on the side.
