In the following order, top on half of the tortilla with the cheese, tomatoe, pepper, and cajun seasoning to taste. Spread evenly and then top with chicken. Fold over the empty tortilla side to close, then flip the quesadilla over in the pan so that the cheese is on top of the chicken. Cook until the chees melts. Remove from pan, cut, and serve with lettuce, tomato, sour cream, and salsa on the side.
