Flatten and halve the 2 chicken breasts. Combine the flour, salt, pepper, paprika and cayenne. In a separate bowl, mix the beaten egg, lemon juice and melted butter. Crush crackers in food processor and place in a third bowl.
Over medium high heat combine the oil and butter in a large skillet. Dip the four chicken pieces one at a time in the flour (shake off excess) then in the lemon butter and egg mixture. Lastly, the crushed crackers. Place in the hot pan and fry for about 5-6 minutes per side.
