Preheat oven to 425 degrees. Drain thawed spinach; transfer to a large bowl. Add ricotta cheese, garlic, 1 tsp salt, and 1/4 tsp pepper; stir well to combine. Stuff chicken with filling; season chicken generously with salt & pepper.
Place on rimmed baking sheet; roast until chicken is cook through 25-30 mins. If you like, you can make the roasted plum tomatoes (see recipe under side dishes), scattering the tomatoes on the same baking sheet around the chicken. Serve immediately.
