Spread crumbs on a clean dry surface. Roll the chicken pieces in the crumbs, pressing down to make sure they adhere.
In an ovenproof saute pan large enough to hold all the chicken, warm olive oil and melt butter over medium heat. Add breaded chicken. Cook 2 minutes on each side, seasoning with salt and pepper.
Transfer pan to oven and back 7-10 minutes, or until chicken is cooked through.
