     Sauerkraut Cake- Mock Chocolate Cake

Ingredients
1 cup sugar
1 cup butter
1 tbsp vanilla
3/4 cup cocoa
1 tsp salt
2 eggs
1 cup flour
1 tsp soda
1 tsp baking powder
 
3/4 cup water
1/2 cup sauerkraut (washed, well drained & chopped)

Instructions
Cream butter and sugar. Add vanilla and cocoa. Add eggs and blend well. Sift dry ingredients and add alternately with the water. Add kraut last.
Bake in greased and floured 9x9 pan or 2-8-inch pans at 350 degrees for 30-40 minutes.
The sauerkraut resembles coconut in the baked cake. This cake is served in many Virginia schools.
