     Lemon Raspberry Mascarpone Trifle

Ingredients
1/2 cup sugar
1 lemon, zested and juiced
16 oz mascarpone
1 pound cake, cut into small squares
1/2 cup raspberry wine or lemoncello
2 cups fruit (raspberry and strawberries)
Fresh mint leaves
 

Instructions
Combine sugar and lemon juice, cook to dissolve, cool.
Combine sugar/lemon mix with mascarpone and lemon zest and some heavy cream. Whip until light and fluffy.
Place cake brushed with wine or lemoncello, then mascarpone, then berries, then cake, then mascarpone, and berries. Garnish with mint.
