1 1/4 cup couscous or orzo
|

2 cups hot vegetable stock
|
|
1 bunch spring onions, sliced into short lengths
|

1 yellow bell pepper, deseeded and cut into dice
|

1 orange bell pepper, deseeded and cut into dice
|

2 pink grapefruit
|
|
small handful fresh mint leaves
|

300 g feta
|

Instructions |
|
|
Place the couscous in a shallow bowl and pour over the hot stock. Let stand for 5 min. Fluff with for and stir in the onions and peppers.

Section grapefruit over bowl to catch juice. Fold in the grapefruit sections, and then add the mint.

Season with black pepper and salt.
