     Gluten-Free Fluffy White Icing

1/2 cup Karo light syrup
1 egg white
1/4 tsp cream of tartar
1 tsp vanilla

In a small saucepan, bring the syrup to a boil over medium heat. In a small mixing bowl, beat egg white and cream of tartar until soft peaks form. Beat in vanilla. Gradually beat in the hot syrup and continue beating for about 3 minutes or until stiff and shiny. Makes about 2 cups.
Can use with Deep Dark Chocolate Cake
