Cream together eggs, sugar, shortening, milk and vanilla with mixer. Add baking powder, salt xanthan gum and Gluten-Free Blend. Mix 1/2 minute on low speed and 3 minutes on high speed.
Pour batter into 9x12-inch pan that has been coated with cooking spray.
Bake for 20 minutes at 350 degree. Do not over bake.
Can make cupcakes with this batter.
