     Gluten-Free White Cake or Cupcakes

3 eggs
1 1/2 cup sugar
1/2 shortening or margarine
1 cup milk or soy milk
1 tsp vanilla
3 1/2 tsp baking powder
1 tsp salt
1 tsp xanthan gum
2 cup Gluten-Free Blend (see recipe)

Cream together eggs, sugar, shortening, milk and vanilla with mixer. Add baking powder, salt xanthan gum and Gluten-Free Blend. Mix 1/2 minute on low speed and 3 minutes on high speed.
Pour batter into 9x12-inch pan that has been coated with cooking spray.
Bake for 20 minutes at 350 degree. Do not over bake. Can make cupcakes with this batter.
