     Royal Icing

Ingredients
1 egg white
1/2 tsp vanilla or almond extract
1 cup powdered sugar
pinch of cream of tartar
 
Instructions
Combine and beat all ingredients until icing holds its shape in sharp peaks when beater is lifted.
Add a few drops of water if icing is too thick; add more sugar if it is too thin. Stir in food coloring.
Spread on cookies or pipe using pastry bag.
