     Red Velvet Cake

1 1/2 cup sugar
1 cup Wesson oil
2 eggs
1 cup buttermilk
1 tsp vanilla
1 tsp vinegar
2 1/2 cup self-rising flour
1 tsp baking soda
2 bottles red food coloring
1 box confectioners sugar
1 (8 oz) bar cream cheese
1 tsp vanilla
2 tsp milk
1 cup chopped nuts (sprinkle on top of cake)

Preheat oven to 350 degrees. Mix together flour and baking soda. Mix first 6 ingredients together in large mixing bowl. Gradually add flour, baking soda mixture and mix until smooth. Add red food coloring and mix thoroughly.
Pour into 3 greased and floured cake pans and bake at 350 degrees until done. Do not overcook. Bake approximately 20 minutes.
Icing- Cream sugar, cream cheese, vanilla and milk together. Icing will not be stiff; ice each individual layer, then ice outside of cake. Sprinkle nuts on top. I prefer to use pecans.
