     Carrot-Pineapple Cake

Ingredients
1 c. Oil
1 1/2 c. Sugar
3 Eggs
1 tsp. Vanilla
2 tsp. Baking Soda
1 tsp. Salt
1 tsp. Cinnamon
2 c. Flour
1 8 oz. can Crushed Pineapple
 
1 c. Coconut
1 c. Chopped Nuts
2 c. Grated Raw Carrots

Instructions
Beat oil and sugar add eggs one at a time. Mix dry ingredients and add to egg, sugar and oil. Mix well, then add carrots , pineapple, coconut and nuts. Blend well. Bake in a 9x13 pan at 350 degrees for 35-45 minutes or until toothpick comes out clean.
