In a medium mixing bowl combine egg whites and water. Add oat bran baking mix. Beat with a rotary beater till well blended.
Spray a cold griddle or heavy skillet with nonstick coating. Preheat griddle. Pour about 1/4 cup batter onto griddle for each pancake. Cook over medium-high heat for 2-3 minutes or till light brown on both sides, turning once. If desired, serve with fresh fruit and sprinkle with powdered sugar. Makes 12 pancakes
