     Versatile Vinaigrette

Servings   1 1/4 cup

Ingredients
3/4 cup canned no-salt-added chicken broth, undiluted
1/4 cup white wine vinegar
2 tsp minced garlic
1 1/2 tsp olive oil
1 tsp Dijon mustard
1/8 tsp pepper
Variations-
Basil Vinaigrette-
 
Omit Garlic and mustard. Add 3 tbsp finely chopped
fresh basil and 1 green onion finely chopped.
Garlic-Blue Cheese Vinaigrette-
Add 1/4 cup crumbled blue cheese and 1 tsp sugar.

Instructions
Combine all ingredients in a jar; cover tightly, and shake vigorously to blend. Chill thoroughly. Serve with salad greens. Yield 1 1/4 cups
